We stayed here for a week for our honeymoon in October. When we were picking a hotel, we were debating between the Fairmont and Four Seasons and the Grand Wailea. Ultimately, we chose the Fairmont for a variety of reasons, some based on our friends' recommendations who have stayed at all three. What won us over was the fact that all of the rooms at the Fairmont were suites with a front sitting room and a separate bedroom. It was great to come back to our room at the end of a day at the beach or at the pool and relax in our room without having to jump into the bed.
The bathroom is GORGEOUS. I've seen New York apartments that could fit in there! It's wonderfully appointed and the soaps, etc are absolutely refreshing.
The service at the hotel is amazing. We were greeted with cool towels, juice and leis - tremendously relaxing and welcome after a long long flight! Everyone, from the room service and cleaning staff, to the bartenders and front desk staff, were amazing and friendly. They are SO good with honeymooners - everyone kept calling me Mrs. LastName - it was so fun.
The dining options at the hotel are also fantastic - pricey (but what isn't in Maui), but delicious. We spent one night just restaurant/bar hopping at the hotel and had a great evening.
The Fairmont beach is FANTASTIC - heads and shoulders above some of the others in Wailea, mostly because it is exclusive and doesn't get a lot of the public beach traffic that many of the other beaches have. It doesn't have some of the amenities as some of the others do (padded lounge chairs on the beach, guys with sunscreen greeting you before you hit the sand, etc) - but for the privacy, it's worth it. There is also great snorkling right off the beach and you can rent gear right from the hotel. We went out a few times.
Whatever option you choose, you are guaranteed to have a wonderful time in Maui!
